Description

This fresh salsa is perfect for dipping or as a topping for your favorite dishes.


Ingredients

Scale
  • 1 (28-ounce) can whole tomatoes (or diced tomatoes)
  • ½ small onion
  • 1 clove garlic
  • ⅓ cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • ½ medium jalapeno pepper (seeded and piths removed)
  • ½ teaspoon ground cumin
  • ½ teaspoon sugar
  • ½ teaspoon salt (or more to taste)
  • ½ teaspoon black pepper (or more to taste)

Instructions

  1. Pour the canned tomatoes into a strainer set over a bowl. Let them drain for a minute and reserve the juice.
  2. Add the drained tomatoes, onion, garlic, cilantro, lime juice, jalapeno, cumin, sugar, salt, and black pepper to a food processor. Pulse until finely chopped and combined.
  3. Add some of the reserved tomato juice and pulse again until the salsa reaches your desired consistency. Taste and add more salt and pepper as needed. The salsa will keep well in the fridge for 5 days.

Notes

  • This salsa is versatile and can be adjusted to your preferred spice level by modifying the amount of jalapeno.
  • For a chunkier salsa, pulse the ingredients less in the food processor.
