- 1 cup cottage cheese (full-fat or low-fat)
- 1 large egg
- 1 tablespoon maple syrup or honey
- ½ teaspoon vanilla extract
- ¼ cup fresh or frozen blueberries
- Optional toppings: cinnamon, almond slices, or extra berries
Instructions
- Preheat and Prep: Start by preheating your oven to 350°F (175°C). Lightly grease one or two small ramekins or oven-safe bowls. These should be able to hold about ¾ to 1 cup of batter each.
- Blend the Base: In a blender or food processor, combine the cottage cheese, egg, maple syrup or honey, and vanilla extract. Blend until smooth and creamy—this step is key for achieving that cheesecake-like texture.
- Pour and Add Blueberries: Pour the blended mixture into your prepared ramekins. Gently stir in the blueberries, or layer them on top. If you’re using frozen berries, there’s no need to thaw—just toss them right in.
- Bake Until Set: Place the ramekins on a baking sheet and bake for 25–30 minutes, or until the tops are slightly golden and the center is set but still soft. The bowls will puff slightly and then settle as they cool.
- Serve Warm or Chill for Later: Let cool for a few minutes before enjoying warm. You can also refrigerate and eat chilled the next day—it’s just as delicious cold, almost like a protein-packed cheesecake.
