Description

Deliciously crispy baked zucchini fries, perfect for snacking or as a side dish.


Ingredients

  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the zucchini. Cut into sticks about 3-4 inches long and 1/2 inch thick.
  2. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mix of cornmeal, Parmesan, garlic powder, and Italian seasoning.
  3. Coat each zucchini stick in flour, then egg, then the cornmeal-Parmesan mix. Press gently to make coating stick.
  4. Place coated fries on a parchment-lined baking sheet or on a wire rack over the sheet for crispness.
  5. Bake at 425°F (220°C) for 20-25 minutes, flipping halfway through, until golden and crispy.
  6. Serve hot with your favorite dipping sauce like ranch or garlic aioli.

Notes

  • For extra flavor, you can add spices to the flour coating.
