- 2 medium zucchini
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup cornmeal
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and dry the zucchini. Cut into sticks about 3-4 inches long and 1/2 inch thick.
- Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mix of cornmeal, Parmesan, garlic powder, and Italian seasoning.
- Coat each zucchini stick in flour, then egg, then the cornmeal-Parmesan mix. Press gently to make coating stick.
- Place coated fries on a parchment-lined baking sheet or on a wire rack over the sheet for crispness.
- Bake at 425°F (220°C) for 20-25 minutes, flipping halfway through, until golden and crispy.
- Serve hot with your favorite dipping sauce like ranch or garlic aioli.
Notes
- For extra flavor, you can add spices to the flour coating.
- Make sure the zucchini sticks are evenly coated for the best crunch.
