Description

A light and fluffy orange cake infused with cardamom.

Ingredients

Scale
  • 2 large fresh oranges (zest and juice)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 3 large eggs
  • ½ cup vegetable oil
  • ½ tsp ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan.
  2. Zest and juice the oranges to yield about half a cup of juice.
  3. In a bowl, beat together sugar and eggs until light and fluffy. Mix in vegetable oil, orange juice, and zest until well combined.
  4. In another bowl, whisk flour, baking powder, and cardamom together. Gradually add dry ingredients into the wet mix, stirring gently until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cooling for 10 minutes before transferring to a wire rack.
