- 2 large fresh oranges (zest and juice)
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 3 large eggs
- ½ cup vegetable oil
- ½ tsp ground cardamom
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan.
- Zest and juice the oranges to yield about half a cup of juice.
- In a bowl, beat together sugar and eggs until light and fluffy. Mix in vegetable oil, orange juice, and zest until well combined.
- In another bowl, whisk flour, baking powder, and cardamom together. Gradually add dry ingredients into the wet mix, stirring gently until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling for 10 minutes before transferring to a wire rack.
