Delicious beef enchiladas with a spicy chile sauce.
Ingredients

- 3 lbs beef chuck roast
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 4 cups beef broth
- 12 corn tortillas
- 2 cups shredded cheese (Oaxaca or mozzarella)
Instructions
- Simmer beef with blended chile sauce and broth until tender.
- Shred beef and reserve cooking liquid as sauce.
- Dip tortillas in sauce, fill with beef and cheese, and roll.
- Place in baking dish, top with sauce and cheese.
- Bake at 375°F for 25 minutes until bubbly.
Notes
- For a creamy texture, add a splash of cream to the sauce before baking.
- Garnish with fresh cilantro and sour cream before serving.
