Description

Delicious cheddar mashed potato muffins, perfect for a warm appetizer or side dish.


Ingredients

  • 1 ½ cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ½ cup sour cream
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1 tablespoon melted butter (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and grease or line a muffin tin.
  2. In a large bowl, mix mashed potatoes, cheese, eggs, sour cream, salt, pepper, and parsley.
  3. Spoon the mixture into muffin cups, filling nearly to the top.
  4. Flatten tops gently and brush with melted butter if using.
  5. Bake for 20–25 minutes until golden and crisp on top.
  6. Cool for 5–10 minutes, then remove from the tin and serve warm.
