Deliciously rich mint chocolate brownies topped with a creamy mint layer and chocolate ganache.

- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup unsalted butter (softened, for mint layer)
- 2 cups powdered sugar
- 1 1/2 teaspoons peppermint extract
- 2 tablespoons heavy cream or milk
- 2 to 3 drops green food coloring (optional)
- 1 cup semi-sweet chocolate chips (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a saucepan, melt 1 cup butter with 1 cup chocolate chips until smooth. Remove from heat.
- Stir in sugar, then beat in eggs one at a time. Add vanilla extract and mix well.
- Fold in cocoa powder, flour, and salt until fully combined.
- Pour batter into prepared pan and bake for 25–30 minutes. Let cool completely.
- For the mint layer, beat 1/2 cup softened butter with powdered sugar, peppermint extract, and cream until fluffy. Add food coloring if using.
- Spread the mint mixture evenly over the cooled brownies. Chill for 15 minutes.
- Melt the remaining chocolate chips and gently spread over the mint layer.
- Refrigerate until the topping is fully set, about 30 minutes.
- Slice into squares with a sharp, clean knife and serve chilled or at room temperature.
Notes
- For best results, use high-quality chocolate.
- The green food coloring is optional, adjust to your preference.
- Store leftovers in an airtight container in the refrigerator.
