This creamy pepperoncini chicken is a flavorful and easy dish that’s perfect for any night of the week.

- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup cream cheese, softened
- ½ cup sliced pepperoncini (plus extra for garnish)
- 1 tbsp pepperoncini brine
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & black pepper to taste
- Fresh parsley, chopped (for serving)
Instructions
- Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken breasts and sear 4–5 minutes per side until golden. Remove and set aside.
- Add diced onion to the skillet and sauté until soft. Stir in garlic for 30 seconds.
- Pour in chicken broth and scrape up browned bits.
- Add heavy cream, cream cheese, pepperoncini slices, and pepperoncini brine. Stir until smooth.
- Return chicken to the skillet, spoon sauce over the top, and reduce heat to low.
- Simmer for 10–12 minutes, or until chicken is fully cooked and sauce thickened.
- Garnish with extra pepperoncini and fresh parsley. Serve warm.
