- 2 (15 oz) cans white beans, drained and rinsed
- 2 1/2 cups cooked shredded chicken
- 2 cups low-sodium chicken broth

- 1/4 teaspoon black pepper
- 4 oz cream cheese, softened
- 1/2 cup sour cream

Instructions
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 4–5 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
- Add spices and chiles: Mix in cumin, oregano, chili powder, and cayenne (if using). Cook for a minute to toast the spices, bringing out their depth. Then stir in the diced green chiles.
- Build the base: Add white beans, shredded chicken, chicken broth, salt, and pepper. Stir everything together and bring it to a gentle simmer. Let it cook uncovered for 15–20 minutes to let the flavors meld beautifully.
- Make it creamy: Reduce the heat to low. Stir in softened cream cheese until fully melted and incorporated. Then add sour cream, stirring until the chili is creamy and luscious.
- Serve and garnish: Ladle into bowls and top with your favorite garnishes—shredded cheese, avocado, fresh cilantro, a squeeze of lime, or crunchy tortilla strips. Every topping adds texture and brightness that complements the chili’s richness.
