Description

A creamy and delicious chicken and rice dish that’s easy to make and perfect for a family meal.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long grain white rice
  • 1 can (10 oz) cream of mushroom soup
  • 1 1/2 cups chicken broth
  • 1/2 cup sour cream
  • 1 packet (1 oz) dry onion soup mix
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine cream of mushroom soup, chicken broth, sour cream, onion soup mix, salt, and pepper.
  3. Stir in uncooked rice until well coated.
  4. Pour the mixture into the baking dish and spread evenly.
  5. Place chicken breasts on top of the rice mixture and press in slightly.
  6. Cover the dish tightly with foil and bake for 55–60 minutes.
  7. Remove foil and bake an additional 5–10 minutes to thicken and lightly brown.
  8. Let rest for 5 minutes before serving.

Notes

  • For added flavor, marinate the chicken in the soup mixture for a few hours before baking.
