Description

A delicious and hearty chicken lasagna layered with ricotta, mozzarella, and marinara sauce.


Ingredients

  • 1 pound cooked chicken, shredded
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup fresh spinach, chopped
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Cooking spray or olive oil, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine the shredded chicken, ricotta cheese, chopped spinach, garlic, Italian seasoning, salt, and pepper. Mix well.
  4. Lightly grease a 9×13-inch baking dish with cooking spray or olive oil to prevent sticking.
  5. Spread a thin layer of marinara sauce on the bottom of the baking dish. Then, layer three lasagna noodles on top.
  6. Spread half of the chicken mixture over the noodles, followed by a third of the mozzarella cheese and a sprinkle of Parmesan.
  7. Add another layer of marinara sauce, three noodles, the remaining chicken mixture, half of the remaining mozzarella cheese, and more marinara.
  8. Top with the last three noodles, the rest of the marinara sauce, and sprinkle with mozzarella and Parmesan cheese.
  9. Cover the baking dish with aluminum foil to keep the moisture in while it cooks.
  10. Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  11. After removing from the oven, let it cool for about 5-10 minutes before slicing to allow the layers to set.
