Description

A classic holiday drink that combines rich flavors for a festive treat.


Ingredients

Scale
  • 9 large egg yolks
  • 3/4 cup granulated sugar
  • 11/2 cups heavy cream
  • 3 cups whole milk
  • 3/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Ground cinnamon (optional, for topping)
  • Whipped cream (optional, for topping)

Instructions

  1. In a large nonstick pot set over medium-high heat, combine the cream, milk, nutmeg, and salt. Stir often until the mixture reaches a simmer (but don’t boil).
  2. Meanwhile, in a large bowl, add the egg yolks only and granulated sugar. Use a whisk to whisk until combined.
  3. While whisking the egg mixture constantly and vigorously, scoop and very gradually pour in 1/2 cup of the hot cream mixture into the eggs. Repeat, adding another 1/2 cup hot cream into the eggs until incorporated, for a total of 1 more cup.
  4. Once the eggs are tempered, gradually pour the egg mixture back into the pot on the stove while whisking constantly. Whisk constantly for a few minutes or until the mixture slightly thickens (or it reaches 160°F on a thermometer).
  5. Remove the pot from heat and stir in the vanilla. If adding alcohol, add it now too.
  6. Place a fine mesh strainer over a pitcher or another container and pour the eggnog through the strainer. Cover the container with plastic wrap and chill in the fridge until fully cooled, about 3 hours.
  7. Pour into small glasses and top with a sprinkle of cinnamon or a dollop of whipped cream. Enjoy cold!
