Deliciously roasted baby Yukon Gold or red potatoes seasoned with garlic and Parmesan cheese.

- 1 pound baby Yukon Gold or red potatoes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and halve the baby potatoes, then pat them dry thoroughly.
- In a large bowl, toss potatoes with olive oil, minced garlic, salt, pepper, and Italian seasoning.
- Arrange the potatoes cut-side down in a single layer on the prepared sheet.
- Roast for 25–30 minutes, flipping in the last 5–10 minutes for even browning.
- Sprinkle Parmesan cheese over potatoes during the last 5 minutes of roasting.
- Remove from oven when golden and crisp, then garnish with chopped parsley and serve.
Notes
- For extra flavor, consider adding some lemon zest or red pepper flakes.
