Delicious chocolate cookies sandwiching a creamy mint filling, perfect for any occasion!

- 1 cup (125g) all-purpose flour
- ½ cup (50g) unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup (115g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1–2 tbsp milk or cream
- ½ tsp peppermint extract
- Green food coloring (optional)
- ⅓ cup (60g) mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
- Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass or your hand.
- Bake for 8-10 minutes, or until the edges are set. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- In a medium bowl, beat the softened butter until smooth. Gradually add powdered sugar, beating until combined.
- Add milk or cream, one tablespoon at a time, until the filling reaches a spreadable consistency. Mix in the peppermint extract and green food coloring, if using.
- Fold in the mini chocolate chips.
- Once the chocolate wafers are completely cool, spread or pipe a generous amount of mint cream filling onto the flat side of half the cookies. Top with the remaining cookies, pressing gently to sandwich them together.
- Allow the cookies to set for about 30 minutes so the filling firms up before serving.
Notes
- Make sure to let the cookies cool completely before adding the filling.
- You can adjust the amount of peppermint extract to taste.
