Description

Delicious chocolate cookies sandwiching a creamy mint filling, perfect for any occasion!


Ingredients

  • 1 cup (125g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 12 tbsp milk or cream
  • ½ tsp peppermint extract
  • Green food coloring (optional)
  • ⅓ cup (60g) mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
  5. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass or your hand.
  6. Bake for 8-10 minutes, or until the edges are set. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. In a medium bowl, beat the softened butter until smooth. Gradually add powdered sugar, beating until combined.
  8. Add milk or cream, one tablespoon at a time, until the filling reaches a spreadable consistency. Mix in the peppermint extract and green food coloring, if using.
  9. Fold in the mini chocolate chips.
  10. Once the chocolate wafers are completely cool, spread or pipe a generous amount of mint cream filling onto the flat side of half the cookies. Top with the remaining cookies, pressing gently to sandwich them together.
  11. Allow the cookies to set for about 30 minutes so the filling firms up before serving.
