Ingredients

  • 2 large eggs
  • 1 cup milk
  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan with nonstick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat eggs with milk and vanilla extract until well combined.
  4. Gently fold in diced apples into the wet mixture.
  5. Combine wet and dry mixtures, stirring until just combined—do not overmix.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool before glazing.
