Description

A delicious recipe for crispy roasted thyme potatoes topped with caramelized onions.


Ingredients

  • 4 medium Russet potatoes
  • 1/2 cup unsalted butter
  • 1 tsp fresh thyme leaves
  • 2 medium onions, thinly sliced
  • to taste Salt
  • to taste Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the Russet potatoes. Carefully slice thin slits across each potato, about a quarter-inch apart, without cutting all the way through.
  3. In a saucepan over medium heat, melt the unsalted butter until golden brown and nutty in aroma (about 5-7 minutes).
  4. Place the sliced potatoes on a parchment-lined baking sheet. Drizzle half of the brown butter over them and season with salt, pepper, and thyme. Roast for 30 minutes.
  5. While the potatoes roast, melt some remaining butter in a skillet over medium-low heat. Add the sliced onions and stir until soft and golden brown (15-20 minutes).
  6. Remove the potatoes from the oven; drizzle with remaining brown butter and top with caramelized onions. Return to oven for an additional 10-15 minutes until crispy.
