A delicious recipe for crispy roasted thyme potatoes topped with caramelized onions.

- 4 medium Russet potatoes
- 1/2 cup unsalted butter
- 1 tsp fresh thyme leaves
- 2 medium onions, thinly sliced
- to taste Salt
- to taste Pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the Russet potatoes. Carefully slice thin slits across each potato, about a quarter-inch apart, without cutting all the way through.
- In a saucepan over medium heat, melt the unsalted butter until golden brown and nutty in aroma (about 5-7 minutes).
- Place the sliced potatoes on a parchment-lined baking sheet. Drizzle half of the brown butter over them and season with salt, pepper, and thyme. Roast for 30 minutes.
- While the potatoes roast, melt some remaining butter in a skillet over medium-low heat. Add the sliced onions and stir until soft and golden brown (15-20 minutes).
- Remove the potatoes from the oven; drizzle with remaining brown butter and top with caramelized onions. Return to oven for an additional 10-15 minutes until crispy.
Notes
- This recipe can be served as a side dish or a main dish.
- Ensure not to cut all the way through the potatoes to maintain their structure while roasting.
