- 1 lb lean ground beef
- 2 cups long-grain white rice (uncooked)
- 2 cups sharp cheddar cheese (grated)
- 1 medium onion (diced)
- 1 bell pepper (diced)
- 1 tsp garlic powder
- 15 oz canned tomato sauce
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion and bell pepper; sauté until softened (about 5 minutes).
- Stir in garlic powder, salt, pepper, tomato sauce, and chicken broth; simmer for 3 minutes.
- In a large bowl, combine cooked rice with the beef mixture and half of the cheddar cheese; mix well.
- Transfer the mixture to the prepared baking dish, topping with remaining cheese.
- Bake uncovered for 25-30 minutes until bubbly and golden brown.
- Let cool for a few minutes before serving.
Notes
- This casserole can be prepared ahead of time and stored in the refrigerator before baking.
- For a spicier version, add diced jalapeños or your favorite hot sauce.
