- 4 boneless, skinless chicken breasts (about 1 lbs)
- 8 oz fresh button or cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 tsp fresh thyme leaves
- 2 tbsp fresh parsley, chopped
- 2 tbsp low-sodium soy sauce
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients on the counter for easy access.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden brown on both sides (5-7 minutes per side). Remove from skillet.
- In the same skillet, sauté garlic and mushrooms until browned (5-6 minutes).
- Add chicken broth and soy sauce; scrape any browned bits from the pan. Simmer for 2 minutes before stirring in heavy cream.
- Return chicken to the skillet along with thyme and parsley. Simmer for an additional 5 minutes or until heated through.
- Serve hot with crusty bread or over rice.
