Description

A delicious cheesy corn bake that is perfect for parties or as a side dish.


Ingredients

Scale
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 12 jalapeños, finely chopped (adjust to taste)
  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven: 350°F (175°C). Grease a small baking dish.
  2. Mix ingredients: In a medium bowl, combine cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Add corn & jalapeños: Stir in corn, jalapeños, and shredded cheddar cheese. Mix well.
  4. Bake: Transfer mixture to prepared baking dish. Bake for 20–25 minutes until bubbly and lightly golden on top.
  5. Garnish & serve: Sprinkle with chopped cilantro before serving. Serve warm with tortilla chips, crackers, or fresh veggies.

Notes

  • This dish can be prepared ahead of time and baked just before serving.
