A delicious cheesy corn bake that is perfect for parties or as a side dish.
Ingredients

- 2 cups corn kernels (fresh, frozen, or canned)
- 1–2 jalapeños, finely chopped (adjust to taste)
- 1 cup cream cheese, softened
- ½ cup sour cream
- ½ cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika (optional)
- Salt and pepper, to taste
- 2 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven: 350°F (175°C). Grease a small baking dish.
- Mix ingredients: In a medium bowl, combine cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
- Add corn & jalapeños: Stir in corn, jalapeños, and shredded cheddar cheese. Mix well.
- Bake: Transfer mixture to prepared baking dish. Bake for 20–25 minutes until bubbly and lightly golden on top.
- Garnish & serve: Sprinkle with chopped cilantro before serving. Serve warm with tortilla chips, crackers, or fresh veggies.
Notes
- This dish can be prepared ahead of time and baked just before serving.
- Adjust the jalapeño amount according to your heat preference.
- Feel free to add more cheese for extra creaminess!
