Ingredients

- 1 tablespoon olive oil
- 1 lb lean ground beef
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 (28 oz) can crushed tomatoes
- 1 (14 oz) can tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup part-skim ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5–6 minutes. Use a spoon to break up the meat as it cooks. Once done, drain any excess fat if necessary.
- Add chopped onion and garlic to the pot and sauté for 2–3 minutes until fragrant and softened.
- Pour in the beef broth, crushed tomatoes, and tomato sauce. Stir in the basil, oregano, salt, pepper, and crushed red pepper flakes (if using). Bring everything to a gentle boil.
- Once boiling, add the broken lasagna noodles. Stir well to prevent them from sticking. Let the soup simmer uncovered for 12–15 minutes, stirring occasionally, until the noodles are tender.
- In a small bowl, mix together the ricotta, mozzarella, and parmesan. When ready to serve, spoon the cheese mixture into each bowl and ladle the hot soup over it.
- Top with fresh basil or parsley if desired. Serve warm, with crusty bread or a green salad on the side.
Notes
- This soup can be stored in an airtight container in the refrigerator for up to 3 days.
