Description

These Low-Carb High-Fiber Savory Muffins are a delicious and nutritious option for any meal.


Ingredients

Scale
  • 1 cup cottage cheese, rinsed and drained well
  • 1 1/2 cups blanched almond flour
  • 1 1/2 cups flax seed meal
  • 1 cup finely grated Parmesan
  • 2 1/2 tablespoons baking powder
  • 2 teaspoons Spike Seasoning
  • 8 eggs, beaten so they’re well combined
  • 1/2 cup thinly sliced green onion

Instructions

  1. Preheat oven to 375F/190 C and spray Silicone Baking Cups with non-stick spray.
  2. Dump the cottage cheese into a colander with small holes, rinse with cold water, and let it drain well.
  3. Put the almond flour, flaxseed meal, freshly grated Parmesan, baking powder, and Spike Seasoning into a bowl, then mix well until evenly combined.
  4. Beat the eggs until well combined.
  5. Thinly slice the green onions and mix them with the drained cottage cheese into the beaten eggs.
  6. Combine the egg mixture with the dry ingredients, mixing until all is combined.
  7. Divide the batter into 12 muffin cups, starting with 1/3 cup batter each.
  8. Bake for 25-27 minutes, or until the tops are lightly browned and firm.
  9. Enjoy immediately, or store in the fridge or freezer to reheat later.

Notes

  • Use the entire green onion for maximum flavor.
  • For best results, mix the batter well to avoid clumps.
