Delicious beef and rice casserole with veggies and cheese.
Ingredients

- 1 lb ground beef (lean)
- 1 cup white rice (uncooked)
- 1 onion (chopped)
- 1 bell pepper (diced)
- 2 cloves garlic (minced)
- 14 oz diced tomatoes
- 1 cup tomato sauce
- 2 cups beef broth
- 2 tbsp taco seasoning
- 1 cup shredded cheese (Mexican blend)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Brown ground beef with onion and bell pepper in a skillet. Add garlic and seasonings.
- Stir in rice, tomatoes, tomato sauce, and broth.
- Transfer mixture to baking dish and cover with foil.
- Bake 35–40 minutes until rice is tender.
- Top with cheese and bake uncovered until melted.
Notes
- For extra flavor, add more spices to taste.
- This dish can be assembled in advance and stored in the refrigerator before baking.
