Instructions
- Prepare the oven and baking dish – Start by preheating your oven to 375°F (190°C). Lightly grease a baking dish so the chicken doesn’t stick while cooking. This small step makes cleanup much easier later.
- Season the chicken – Place the chicken breasts in the baking dish in a single layer. Sprinkle them with garlic powder, onion powder, paprika, salt, and pepper. These simple spices add warmth and depth without overpowering the dish. When I first made Mississippi Mud Chicken, I was surprised by how just a few pantry spices could build such great flavor once baked with the creamy topping.
- Mix the creamy topping – In a bowl, combine the mayonnaise, sour cream, and melted butter. Stir until the mixture becomes smooth and creamy. This mixture is what gives Mississippi Mud Chicken its signature richness. As it bakes, it melts into the chicken and forms a velvety sauce.
- Add the toppings – Spread the creamy mixture evenly over the chicken breasts. Sprinkle the shredded cheddar cheese across the top, then add the diced turkey ham. The cheese melts into a golden, bubbly layer while the turkey ham adds a savory bite that balances the creaminess.
- Bake the dish – Place the baking dish in the oven and bake for about 35–40 minutes, or until the chicken is fully cooked and the cheese is melted and lightly golden. The smell that fills the kitchen during this stage is incredible—warm, cheesy, and deeply comforting.
- Finish with green onions – Once the chicken is cooked through, remove it from the oven and sprinkle sliced green onions over the top. They add a pop of freshness and color that brightens the dish. Let the Mississippi Mud Chicken rest for a few minutes before serving so the sauce settles and thickens slightly.
