- 1 sheet puff pastry (thawed)
- 1 tbsp olive oil
- 1 tbsp butter
- 2 shallots (sliced)
- 2 cups mushrooms (sliced)
- 4 oz goat cheese (softened)
- 2 tbsp heavy cream
- 1 tsp fresh thyme
Instructions
- Preheat oven to 400°F (200°C) and line baking sheet with parchment.
- Roll puff pastry and cut into portions. Score borders lightly.
- Sauté shallots and mushrooms in butter and olive oil until golden.
- Mix goat cheese with cream and herbs until smooth.
- Spread cheese on pastry and top with mushroom mixture.
- Bake 18–22 minutes until golden and puffed.

- Ensure the puff pastry is completely thawed before using for the best results.
- Feel free to add additional herbs or spices to enhance the flavor.
