Orange Glaze Cookies

Description

These delightful cookies are infused with orange zest and topped with a sweet glaze, making them perfect for any occasion.


Ingredients

  • 3/4 cup butter (softened)
  • 1 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • zest of 1 orange
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 1/4 cup fresh-squeezed orange juice
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. In a large bowl, cream together the butter and sugar until the mixture is light and fluffy. A hand mixer works well, but a stand mixer is great too.
  2. Mix in the egg and egg yolk until fully combined. Add the vanilla and orange zest and blend again.
  3. Add the flour and salt and mix until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for one to two hours until firm.
  5. While the dough chills, preheat your oven to 375 degrees F.
  6. Once the dough is firm, roll it out on a lightly floured surface until it is about 1/4 inch thick.
  7. Cut out shapes with your favorite cookie cutter and place them on a baking sheet lined with parchment.
  8. Bake for 8 to 10 minutes, just until the edges start to turn golden. Let the cookies cool completely.
  9. While the cookies cool, make the glaze. In a small bowl, whisk together the powdered sugar, orange juice, vanilla, and salt until smooth. If it feels too thick, add a splash more juice. If it seems too thin, whisk in a bit more powdered sugar.
  10. When the cookies are fully cooled, dip them face down into the glaze and lift them out slowly to let the excess drip off. Set them on a flat surface and sprinkle with coarse sparkling sugar. Let the glaze set before packing the cookies into an airtight container.
