- 3/4 cup butter (softened)
- 1 1/4 cup sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla
- zest of 1 orange
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 2 cups powdered sugar
- 1/4 cup fresh-squeezed orange juice
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- In a large bowl, cream together the butter and sugar until the mixture is light and fluffy. A hand mixer works well, but a stand mixer is great too.
- Mix in the egg and egg yolk until fully combined. Add the vanilla and orange zest and blend again.
- Add the flour and salt and mix until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for one to two hours until firm.
- While the dough chills, preheat your oven to 375 degrees F.
- Once the dough is firm, roll it out on a lightly floured surface until it is about 1/4 inch thick.
- Cut out shapes with your favorite cookie cutter and place them on a baking sheet lined with parchment.
- Bake for 8 to 10 minutes, just until the edges start to turn golden. Let the cookies cool completely.
- While the cookies cool, make the glaze. In a small bowl, whisk together the powdered sugar, orange juice, vanilla, and salt until smooth. If it feels too thick, add a splash more juice. If it seems too thin, whisk in a bit more powdered sugar.
- When the cookies are fully cooled, dip them face down into the glaze and lift them out slowly to let the excess drip off. Set them on a flat surface and sprinkle with coarse sparkling sugar. Let the glaze set before packing the cookies into an airtight container.
