- 6 cups mixed salad greens
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup red bell pepper, thinly sliced
- 1 cup cooked rice noodles
- 1 cup fresh herbs (such as cilantro and mint)
- ½ cup sliced green onions
- 1 cup protein of choice (optional, like shrimp, chicken, or tofu)
Instructions
- In a large bowl, combine the mixed salad greens, shredded carrots, cucumber, red bell pepper, and fresh herbs.
- If using rice noodles, prepare them according to package instructions. Once cooked, drain and rinse under cold water. Set aside.
- Add the cooked rice noodles and sliced green onions to the salad bowl.
- In a small bowl, whisk together the grated ginger, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, sriracha, minced garlic, salt, and pepper.
- Pour the spicy ginger dressing over the salad, tossing gently to combine all ingredients well.
- If desired, add your choice of protein on top or mixed into the salad.
