- 6 bone-in, skin-on chicken thighs
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup apple cider
- 2 tablespoons apple cider vinegar
- 3 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 2 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 large apple, thinly sliced
- 1 cup shredded carrots
- 2 tablespoons plain Greek yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper, to taste
Instructions
- Pat your chicken thighs dry and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken, skin-side down first, for about 6–7 minutes or until golden brown. Flip and cook for another 4–5 minutes. Transfer chicken to a plate and set aside.
- In the same pan, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the apple cider, apple cider vinegar, maple syrup, Dijon mustard, and thyme. Stir to combine and scrape up the flavorful brown bits from the bottom of the skillet.
- Return the chicken to the pan, skin-side up. Reduce the heat to medium-low and let it simmer uncovered for 25–30 minutes, occasionally spooning the glaze over the chicken. The sauce should reduce and thicken until it clings to the chicken with a glossy sheen.
- While the chicken cooks, combine the green and red cabbage, apple slices, and shredded carrots in a large bowl. In a separate small bowl, whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt, and pepper. Toss the slaw with the dressing until well-coated.
- Serve the sticky apple cider chicken hot, spooning extra glaze over the top. Pile the crisp slaw beside it for a satisfying contrast in texture and flavor.
Notes
- For best results, let the chicken marinate in the seasoning for 30 minutes before cooking.
